The mignon lentil is an ancient variety legume, grown in a natural way and selected manually. Lentils were appreciated for their high nutritional properties and in particular for their very high protein content, in many cases equal to or higher than that of products of animal origin. They are famous for their delicacy and their size: the average diameter is about 2-3 mm. They have a pleasant flavor and a sweet and aromatic taste, remain well intact when cooked and are easily digestible.
