Caponata (“capunata” in Sicilian) is a typical product of Sicilian cuisine. It is a set of fried vegetables (mostly aubergines), seasoned with tomato sauce, celery, onion, olives, capers, extra virgin olive oil, wine vinegar, sugar, salt, pine nuts, black pepper and basil. There are a lot of variations, depending on the ingredients. Caponata, widespread throughout the Mediterranean Sea, is generally used as a side dish or appetizer, but since the 18th century it was a single dish, accompanied by bread.
